Hey foodies today we are going to learn about milk Payasam. This dish is very traditional recipe in India. We use to make this milk Payasam in great days like festivals, birthday parties, wedding functions, Poojas and so on. If you want to make quick dessert then you can go-to this payasam recipe. With few ingredients you can prepare this recipe.

One of my lovely friend likes this dessert so much. I dedicated this recipe for her. I love to serve dessert in my daily dish from which you can get full of satisfaction. My uncle always shouts on me whenever I make dessert recipes, you know why? Because he is a diabetic patient. He can’t eat sweets as well. He likes payasam, so whenever I make this, I serve him only half cup(i.e. only to check the taste lol…).

There are so many types of Payasams are there. In that milk Payasam is my favorite and very easy to make. It’s a combination of Milk, rice, cardamom powder, ghee and dry fruits. Here also so many methods are there to prepare dessert dishes. Here I will tell you 2 methods. Let’s start step by step.

Method 1:


  • Milk – 6 cups
  • Rice – 2 cups
  • Saffron – 6 to 10 strands
  • Cardamom powder – 1 table spoon
  • Pistachio or almond – ¼ cup
  • Ghee as required
  • Water as required (optional)
  • Sugar – 1 cup

Cooking method:

  • Soak saffron strands in 2 table spoon of Milk and keep aside.
  • Next heat 1 table spoon of ghee in a pan and fry rice until it get light brownish colour.
  • Add those fried rice in the blender and roughly blend for 10 seconds as it should not become fine powder (rice must be just broken).
  • Take cooker and pour blended rice and add little water and pressure it to one whistle.
  • Take deep pan and add milk. Let it boil. Then add boiled rice to the Milk, continue boiling in low flame for 10 minutes.
  • Add cardamom powder, sugar and soaked saffron, mix it well.
  • Payasam will become little thick then add crushed pistachio and ghee. Mix well.
  • Serve hot or cold. You can garnish with saffron and any dry fruits.

Method 2:


  • Milk – 6 cups
  • Cardamom powder – 1 table spoon
  • Saffron – few strands
  • Gulab jamun – 6 or as required
  • Crushed almond and pistachio – ¼ cup

Cooking method:

  • Boil milk in a pan in low flame.
  • Add crushed almond and pistachio to the Milk.
  • Then add cardamom powder and soaked saffron as I told you in the 1st method.
  • Stir well. Switch off gas flame.
  • Pour to the bowl and add already made gulab jamun to the bowl and garnish with cashew nuts or any nuts.
  • Now milk Payasam with gulab jamun is ready to serve.

Note: Here many options are there. You can add bread slices to the milk. First roast bread slices, chop it and soak it in sugar syrup. You can add these slices to the milk instead jamuns. Other option is dates. If you want to add dates to the milk then add little sugar to the Payasam.  A pinch of color can be added to the dish. Gulab jamun and milk Payasam is a best combination which are best dessert dishes for your precious day.
