Here I am going to tell about how to make Eggplant-Brinjal Soup Recipes easily. Just now I made brinjal soup in my kitchen. I have enjoyed a lot. So I felt to share this recipe with you. If you don’t like eggplant then this is the best option for you, so you can’t find eggplant in this recipe if you make puree of it. Dip any bread or toast in the soup like Zuppa Di Pane and have it. It will be nice combination.

On last week we planned to go out to roam our hill station. At the same time we went to restaurant and my hubby ordered eggplant soup and bread, since that day he fell in love with eggplant soup dish. But I love eggplant since my primary days. So many of my friends hate this eggplant, but I don’t know why so? What is wrong in this vegetable? Whatever it is doesn’t matter, I never hate it. I make so many innovations and made lot of recipes from it. Whatever you do,but main thing i.e. out come is important. If it is not perfect then you may lose interest in cooking.

In vegetable I Iike brinjaI so much. In brinjaI recipe my favourite dish is Bharta which is to be made from whoIe brinjaI. You might be knowing about it. All masalas blended and inserted in the eggplant and frying in the pan after some minutes of marination. It is a flavorful dish forever.

The addition of garlic and  curry leaves provides good aroma for the soup recipe. The addition of jaggery gives good taste. There are different methods are there to make brinjal soup. Here I have used easy method which takes only 5 to 10 minutes.



  • Brinjal – 1 (big)
  • Tomatoes – 3
  • Green chili – 4
  • Cloves of garlic – 5
  • Curry leaves – few
  • Corn flour – 3 table spoon
  • Jaggery – 1 table spoon
  • Ghee – 2-3 table spoon
  • Salt to taste.

Cooking Method:

  • Take a bowl and add sliced brinjal and tomatoes and boil it for few minutes.
  • Separate that boiled slices from water and keep that boiled water a side.
  • Take pan and add 3 table spoon of ghee.
  • Put chopped garlic, green chili and curry leaves.
  • Add that above said boiled water.
  • Then add salt and jaggery and boil it.
  • Take little water in 1 glass, add corn flour and mix it well.
  • Add that well mixed Corn flour liquid in that pan.
  • Boil it for 10 minutes; you will get thick liquid which is nothing but brinjal soup.

Now brinjal soup is ready to serve.Garnish with coriander leaves, or rosemary. You can add carrots in this soup and sprinkle some roasted sesame seeds while serving. Brinjal soup or rasam is a good combination with rice. Soup Recipes are best combination with butter naan and paneer masala.

Note: Instead of boiling you can roast brinjals on an open flame till it tender then remove that skin and mash it to get smooth paste and make puree type of soup. you can use cream in the soup, but it’s optional.
